COMFORT FOOD

SIMPLE POT ROAST MY WAY:

6-8 quarted onions ( your choice red, white or sweet)
large shoulder roast
lipton onion soup mix
1cup flour and plastic bag
seasoning of your choice (pepper, salt, garlic powder etc)what ever works
1 32 oz soft side can of beef stock
1 large teaspoon beef base

Take a good cut of meat like a shoulder roast and place in a plastic bag with a good helping of flour and your seasonings.

Use a dutch oven and place a good helping of Italian olive oil. Brown meat on all sides until deep golden color.

when meat is browned on all side take out and place on a warm platter. Take your chopped up onions dust with flour and place in dutch oven brown for about 8mins or until soft. Stir those onions and get all the good stuff off the bottom to add to the flavor. Add 2 cups beef broth to onions once soften. place back the shoulder roast in dutch oven. Add on large teaspoon beef base (you can buy this at your local grocery store on the season isle), and package of Lipton onion soup mix and turn down to simmer.

I placed all this in a crock pot and waited 10 hours. Just about when it was done i added the rest of the chopped onions and (new potato's and carrots for my spouse); it was great just the way it was with out it.

This was great on the second day!
